I just updated my Mac to macOS Sequoia, and now whenever I open GoodNotes 6, the app loads fine, but the moment I try to add text, it crashes instantly. This issue didn’t exist on the previous macOS version. Any help would be greatly appreciated!

Never heard of your "GoodNotes 6"...
