If you want to transfer your data from your Android phone to your iPhone, start here:
Move from Android to iPhone or iPad - Apple Support
Note that any games you have downloaded/purchased from the Google Play Store will not transfer. You will have to download/purchase them from the Apple App Store. It may be that some of the games have a way for you to transfer your saved game data but that's something you'd need to find out from each game developer.

Samsung and iPhones don’t store anything on the SIM card.
The SIM card merely has your cellular carrier settings on it so you can access the cellular network.
As pointed out above, you can use Apple’s application for Android called Move to iOS.

None of your Android applications are moved over. The move application compiles a list of Applications, checks the AppStore to see if it’s available and downloads them on the iPhone.
Any data or sign ins for an associated application are not moved, it’s a brand new application.
iPhone only uses SIM cards for telecommunication. They are not used for external storage.

They used to store a very limited number of contacts on the SIM. As I recall, only the name and phone number, not the myriad fields we now have. To the best of my knowledge, it has never been possible to store photos on a SIM.
