Is it possible to see what apps or accounts I have used Apple ID to sign in on? I am trying to use Apple ID with my PoGo account and it has a message that says "This account is already linked to an existing player", what player? How do I unlink it to this other player?

Yes.
If you sign into your account at https://account.apple.com/ and click on Sign In and Security (in the column on the left of the page), then in the options presented select Sign in with Apple you will see a list of apps and websites for which you have used your Apple Account as your credentials to sign into the app or website.
If you click on one of the items listed you will then see an option to stop using that sign in. After that you should be okay to set up the access again from a device.
Additionally, you can see the same information in iOS or a Mac at Settings > [Your Name] > Sign in with Apple
Touching on an item will give you the option to delete it.
