If you are trying to get rid of the SOS in your iPhone’s status bar, that means you currently do not have a connection to your carrier’s cellular network. If this continues to be an issue, you will want to contact your carrier.
If you are trying to get rid of the Emergency SOS Satellite feature on your iPhone, you cannot. But either way, why would you want to? If you ever happen to be in an emergency off-the-grid, this can be a life saving feature.
