Stop syncing photos between device with same apple id

How do I stop syncing my photos between devices as well as call records

iPhone 7 Plus, iOS 15

with photos then you go to setttings->your account->icloud->photos and uncheck

sync this iphone/ipad

with call log you can't stop though
