Ask this in the Microsoft Community.

Being Excel is a Microsoft product…

  1. Go Here: Microsoft 365 and Office - Microsoft Support Community
  2. Select: Excel” for “Apps
  3. Tap: Ask a new question

Note: You’ll need to create a login profile for this site, if you don’t already have one. Already having registered Office, you would have provided your eMail for its registration. So, that is the eMail address I recommend you use.

This works well. If a column has a plain email or URL, Adobe will hyperlink it during the conversion process.

The Windows 11 version of Microsoft 365 or Office 2021/2024 can use the Excel Data menu > Get Data > From PDF and do a direct conversion from the PDF table right into the Excel spreadsheet. The Mac versions do not offer this feature, nor does LibreOffice Calc.

On Sequoia v15.3.2, I opened a PDF containing a spreadsheet in Word v16.95.1 and it converted it to a perfect Word table in the resulting DOCX.

I could then copy that Word table to the clipboard and use Excel Paste Special in an open Excel 16.95.1 spreadsheet. That Paste Special offers an alternative link feature that creates an active Excel spreadsheet that updates when the Word table is changed.
