Can I access iPhone 16 with passcode instead of Face ID?

I will never use facial recognition so can you access an iphone 16 with a pass code or touch ID because I’ve had every version but stopped buying at the 7 Plus

and grew up without smartphones so can live without em.

Yes, you can choose to only use a passcode on any iPhone. Face ID is completely optional.

Apparently, you and I have similar privacy expectations. I have found that using the passcode has been a very secure practice for the past two years of ownership of my iPhone.

Until your device is stolen. Then FaceID will protect your content, but passcode will not if the thief has shoulder surfed you entering your passcode. Face ID is more secure than passcode for that reason, as well as for Stolen Device Protection, which requires it.

Had iphones since they were invented and never had one stolen or even heard of anyone elses being stolen so if I do upgrade I’d opt out of the protection.

You've never heard of iPhones being stolen? I find that difficult to believe. Until Apple introduced the Activation Lock, they were one of the most stolen mobile phones. They are still stolen. In the U.S., by one estimate, about 7 million are stolen every year. It's great that no one you know has had this happen to them. Yet. But it doesn't mean it can't happen.
