The iPhone 16 line up was released in September of 2024. As such most of the existing stock would have been manufactured some time in mid to late 2024. Nothing abnormal about that.
How is it old, if it's the current model? Or do you think Apple stops selling iPhones 3 months or 5 months after manufacture and stocks newly manufactured ones?
Phones are not like yogurt. They do not expire, and remain the same regardless of when they were made.
That model and the one being manufactured now are identical as they are the same model of iPhone.
But since it takes time to make, and ship from the manufacturing plants, distribute and stock its normal for devices to have a manufacturing date that is much older than the purchase date.

Nothing old about selling electronics 5 or 6 months after assembly. The model has not been replaced. It’s a solid state device, not a gallon of milk. 😀
If you study the supply chain for iPhones, the manufacturing process typically starts in June, and assembly starts in July or early August at latest. Then assembly facilities run 24 hour shifts to assemble millions of iPhones for global delivery over the next 12 to 18 months, starting in September for consumer release. You just can’t make 90 to 100 million iPhones overnight.

Why would this be a concern to you at all? It's the current model phone and the date of manufacture means nothing. It's not like Apple has a "just in time" manufacturing cycle. The phone will have the full warranty and be indistinguishable from any other iPhone 16 Pro.
I bought a 2025 car and my car was manufactured in 2024 too. It's not concerning to me in the least.
That should be expected as they are not made to order. If that was the case, you would probably be waiting 3 months to get your phone after ordering it.
