On my Apple Watch, I can get a face complication that has my direction, and a level on it, however, I cannot see the level in the Compass app. Am I missing something? (I have an Apple Watch Ultra 2 with watchOS 11.4)

I don't see any level in the Compass app or any indication in the support article that there should be. On the iPhone, level is a part of the Measure app, not the Compass.
Some watch faces do offer level as a complication.
Yes, I agree. The compass for the Complication on my Apple Watch looks like the one in the iPhone Compass app.
