When I speak using Dictation (speech to text) on keyboard, it types out my contacts automatically

I replicated exactly what it was doing by typing it out. It would back track and erase words on it own.

Check to see what you have set up in Text Replacements: Settings>General>Keyboards>Test Replacement.

Copy and paste the transcription into your reply. Change the names but leave it clear that they are names.

For example, I just dictated this:

This Mary is a Stephen test James test

Note: That is word for word what I dictated. I don't have the problem you have.
