What camera settings improve OCR photo quality?

Hi I have a Nikon D3100 camera and take pictures from old books etc and OCR the contents. I have spotty luck with this . Can you tell me what to do to have better luck? The books are too large to scan.

I view the pictures with Preview currently in .jpg
