How do I update iOS 16 on iPhone 6s?

Your iPhone 6s no longer receives the latest iOS updates and cannot go past iOS 15.8.4. While it did receive a security patch a few weeks ago, and may in the future, it will never run iOS 16. It lacks the hardware necessary. You’ll need to purchase a newer iPhone that can run iOS 16, which starts at the iPhone 8.

You don't, because you can't. iOS 15.8.4 is as high as an iPhone 6s is capable of running. I'm sure you're running into apps which require a higher iOS version than your now 10 year old iPhone is capable of running. And that means you'll need to retire your obsolete phone and buy a new or much more modern iPhone at this point.
