MacBook Pro with M3 and M4 are the newest members of the Apple silicon processor series, and probably most or all of what will be available as refurbs.
Recent M series processors will outperform Intel Core i5, Core i7, or Core i9 (8259U, 8559U, 8750H, 8850H, 8950HK, "Coffee Lake") that were available in the two 2018 McBook Pro models.

Here is a high-end i9 from 2018 and one of the very fastest of that era, and an M3 (higher scores are better):


For the oldest of the Apple silicon processors, the low-spec M1 is very much akin to the i9 performance, while the higher-spec is rather faster:

I would suggest a MacBook Pro model with 24 GB, or more memory.

And I’d go somewhat above the Adobe minimums, given your experience and given your likely longevity of use.
Be aware of how many external displays you need, and how many are supported on ypur planned MacBook Pro as well, as base M processors can support fewer, while higher M processors (M series Pro, Max) can support more displays. Base M series models usually support two displays, though there can be variations. This display support info is in the tech specs for the particular MacBook Pro model.
