The display-maker's choice of HDMI 2.0 is unfortunate, as it appears to limit a standard 5K display to no more than 30 hz on a single DIRECT HDMI cable.
Display port 1.4 inherently supports higher resolutions.
When using adapter from a USB-C port, 30 Hz on a single cable.
When using a ThunderBolt port on a genuine Thunderbolt adapter (not just ThunderBolt-compatible), 50 Hz on a single cable.
When using TWO cables (one to drive each of Left/Right of display) MUCH higher resolutions are available, but I don't have access to standard tables that show just how high the refresh rate could go.
With two cables, the display puts the two halves back together with its Picture-By-Picture feature in the display, and Mac users report it works well with no compromises.
On later Macs, if ERROR-FREE operation is not possible, the Mac refuses to connect (at that resolution). This forces the user to reduce colors by disabling HDR and/or reduce the resolution until a picture is obtained.
