I plan on purchasing a i phone 16 from Apple store. Will they be able to transfer all my apps, data pics etc. via a phone to phone transfer and activate it right at the Apple store or will I also have to visit a T Mobile store?

Not necessarily. Some apps may be obsolete and no longer supported in the App Store. There will be no way to use these apps on your new iPhone, regardless of how the transfer is performed.
