How to disable auto workout detection on Apple Watch Ultra 2?

I have an Apple Watch Ultra 2 on watchOS 11.5. As of late the workout app is starting randomly when I’m not actually working out. I’ll be in work focus and be doing something at work that seems to trigger workout to auto start, which turns off the work focus and stops those notifications. I’ve searched online to no avail to figure out how to turn off auto workout detection so it only turns a workout on when I turn it on. This issue seems to occur every 6 months or so and then an update either changes the sensitivity one way or another. I’ve submitted information via the feedback app, but nothing seems to come of it. I’d appreciate some way to turn this functionality off.

Did you check the settings in your WatchApp -> Workout -> Reminders -> Start Workout -> Disabled?

Any chance your Action Button is set up to start a workout when pressed?

Depending on which jacket or sweatshirt I wear, my sleeve can accidentally press the Action Button on my Ultra 2
