As above, how do I prevent the player controls from the Music app from appearing on my lock screen when using Always On Display on my iPhone?

Getting "Now Playing" Widget Off of Lock Screen:
See if this works: "play a song for a few seconds and then click on the now playing display to open the music app. Then you simply close out of it completely and it’ll be gone from your lock screen."

The word “widget” correlates to its use in the referenced thread. I wouldn’t consider it a widget, myself(and I second-guessing it). If “Always On Display” has no options for what you’re trying to achieve here, then that would mean you’d have to recommend this as a feature of an iOS:
So, Recommend this to Apple:
Do your Part: Report this to Apple. Apple may not get back to you directly, but the more feedback Apple receives on this, the more they will know what is their customers prefer, and what and what features to include in updates to come. Apple will know nothing of your thoughts, if you don't provide them with them.
