I have purchased a Minecraft app back in 2015 i guess. However I cannot remember the Apple Id I’ve used to purchased the app and the iPad is gone too. So how do I actually check which apple id I'm using to purchased the app ?

I doubt you can because of privacy reasons. If you could do that then there would be nothing preventing you from checking the purchases made by anybody whose email address you knew. You probably have to be able to fully sign into the account which means not only knowing the Apple ID but also the password. Go through your list of past email accounts you have used and then use Apple's iForgot service to see if you can reset the password.
