I've set up the voicemail by dailing 121 from my phone, but when I go the the phone app and tap the voicemail icon, it shows my NZ SIM voicemail, but it keeps telling me to set up the AUS SIM voicemail. When I try to do that it freezes out.

Voicemail is a phone carrier feature, report the issue to yours.
