My New Mac with a standard British Keyboard layout
I am Typing the @ key but it keeps coming up "
I have tried lots of different keyboard layouts as you suggested but I can't Make it work right.
~ and the hashtag are wrong too.

What is the input language set to?
The @ symbol on a British keyboard layout should be produced when pressing the shift+2 keys.
If you are getting " when pressing shift+2 then it suggests the input language is set to something other than British English or it's using a different layout such as British-PC layout.
If so, the @ symbol would be found by pressing the shift+' (apostrophe) keys. (second key to the right of the L key)
You can go to System Settings ➜ Keyboard ➜ Text Input ➜ Input Sources [Edit]. It all list all the language inputs you have added. Clicking on one of those will display the keyboard layout on the right side. You can press the shift key and the option key in your keyboard to see what characters are produced by the keys in those places when the option or shift keys are pressed down.
The actual printed characters on the keys have no bearing on what is produced when pressing them, unless the input language is set to the same layout as they keyboard.
