How do I keep my iPhone 16 apps from disappearing from my desktop (whatever you call a desktop on an iPhone )in the evening?

I’ve never seen the HOME screen (which I think you mean) disappear in the evening. There is a feature called Standby that will display a selection of widgets on the screen (which you can swipe both vertically and horizontally to view) when the phone is connected to power, locked, in landscape mode and in a near vertical position. If you don’t want this feature you can turn it off in Settings/Standby.
