I would like to configure my iPhone 16 with 2 profiles, one for work with it's profile and apps and one for my personal apps, how can this be done without loosing data?

You can't do that. iPhone can store and use more than one phone number, but it is still a one person device and you can't have different profiles for two different use needs.
