Deleting an app does not cancel a subscription.

If you want to cancel a subscription from Apple - Apple Support

You’ll need to pay what is owed to Apple, or to request and potentially then be granted a refund.

Request a refund for apps or content that you bought from Apple - Apple Support

Apple can block further downloads until the bill for the account is settled.
