Just to add, could you be referring to this: 👭? If so, you should be able to change the skin tone by long pressing it, and then selecting a tone from the top row, and then the bottom row, and then selecting the new pair from the bottom right hand corner.
If not, and if skin tone is important to you, you might want to switch from 👯♂️ to 👭. Naturally, all of this is based off of speculation as to which emoji you’re actually referring to, so your feedback would be appreciated :)

Some versions of iOS and macOS ago, some of the group people emojis had skin tone choice. None of them do now. Only individuals.
There also aren't as many group emojis as there used to be. Of those remaining, one emoji (I think representing twins) has no skin choices. All other group/pair emojis now show one person in the default orange color, with the other person being a silhouette
Your first example (which I thought were twins without zooming in) are, in order, Dancing women with bunny ears, Dancing people with bunny ears, Dancing men with bunny ears. None of which have skin choices.
Your second example applies to all other couples (there are no longer any emojis of three or more people). When clicked for variations, they all show one person in various skin tones and hair color, but the other as a silhouette. Or, both as a silhouette or orange.
Doesn't matter which "couple" you choose (not including the dancers, there are only 11), they're all like this.

You can’t change the skin tone of that emoji. And I’m not even sure if it’s Apple or Unicode who controls skin tones. Does anyone know?
Thanks Kurt. Actually, the emoji came up this morning while searching for a BFF to use & it was the first time I’ve ever seen it. I don’t think I’ve ever used any other “twins” emoji. I appreciate you helping out this Class of 86 OG born & raised in the heart of Silicon Valley.😊Faithful to the Bay
I had to make the my second post mostly as a correction. I was on an iPad for my first response and the "dancers" were too small to make out. Even zoomed in later on my Mac, each of the three bunny-ears emojis still look like twins. No idea why the Unicode Consortium thought we needed three different versions of the same thing. The generic Dancing people with bunny ears would have been sufficient.
