I was not able to download apps such as snap, telegram and the likes on my 7plus due to there unavailability on iOS 15 which the 7plus can support… How do I get the apps please

The developer chooses which devices they want to support by the minimum iOS version, so if they choose not to support your device, you will not be able to download those apps. You cannot update the iOS version on your phone beyond iOS 15.
The app developers at Snap, Telegram, etc have abandoned you by specifying that their apps will only run on recent software versions.
These are decisions made by the app developers.......not by Apple.
If you want to run updated apps, you need a newer iPhone. It's that simple.
