You are going to have to provide more details and even a screenshot may be helpful to visualize what you are seeing.

SafeSearch is a Google feature, so are you using a Google app?
Are you signed into a Google Account when performing searches?
Since you said you proved your age to Google, were you able to turn off SafeSearch on your Google account?
Is your device part of a Family Plan managed by an Organizer or do you have Content & Privacy Restrictions turned on at Settings > Screen Time > Content & Privacy Restrictions?
Are you using a VPN?
Does the same thing happen an both a cellular connection and Wifi connection?
