Can anybody explain to me the purpose of ‘Live View’ ? There are too many add ons in the iPhone camera and it would be nice if we could delete them when not required. I think it has become far too complicated and needless.

You can certainly turn off Live Photos if you want. The feature allows you to select the exact photo you want to be represented in your picture from a 3 second clip. A single photo may have a person looking away or may not be the best picture, and your device will automatically choose one for you, although the Key Photo can be changed if you want a different one. It also brings life to a photo by showing the short video of the capture when you hold your finger on it.

Live View actually takes a short movie rather that a “normal” snapshot.
Edit allows you select the exact instant of the short movie you desire to display as the “non-moving” image.

Live in the camera app, when on, essentially captures a 3 -5 second video of the photo. Any photo you take in Live mode, when you press on it, the video will play for the short duration of it's capture.
The choice is yours whatever you want to do. Personally for me, I would never go back to taking single photos.
As I understand, "Live View" likes the combination of taking photo and filming. To turn this off, click on the symbol below on your camera until it notifies "live off"
It seems you cannot turn it off completely, when you make another shot it comes back on again unless you remember to turn it off. Also it must use up more space on the device.
Go to Settings -> Camera -> Preserve Settings.
