There could be a couple of reasons:

  1. You could be low in memory on your iPhone. Open Settings > General > iPhone Storage - how much space is available on your phone? When you are running out of memory, your phone can exhibit the types of issues you're experiencing. You should at a minimum have at least 10 GB of space available on your iPhone. If you don't have at least that, you need to delete things from your phone you don't need or use, which can include Apps, Music, Photos, Files, Messages, Email, etc.
  2. Another major factor, could be the battery in your iPhone. Batteries don't last forever and you're using a phone released in 2020, 5 years ago. If the battery in your iPhone is the original battery, it likely needed to be replaced a while ago. To check, again open Settings > Battery > Battery Health - if the health of you batter is at 80 or less, you need a new battery as soon as possible. Degraded batteries can swell and cause internal damage, so this is not something you can put off. If you do need a new battery as I imagine you, you can schedule a battery replacement at your closest Apple Store Genius Bar for a cost of about $100 --> iPhone Repair and Service - Apple Support
