I just bought a used iPhone 14Pro, the check coverage with the EMEI shows that it was bought on January 1, 2007, is this possible?

No, but it is an indication that the phone was likely refurbished at a facility that was not approved by Apple, so it may or may not contain genuine Apple parts.

No. You purchased a used device. It has no warranty coverage. There is a good chance it was "refurbished" or otherwise tampered with by an unauthorized shop and is ineligible for any service or support from Apple at all.
If you're unhappy with it, return it to wherever you got it and buy a phone from an authorized source instead.
This is likely a refurbished iPhone. Refurbished iPhones not refurbished by apple will have a warranty date in the past as they have no warranty with Apple. Open Settings > General > About > Model - does the model start with a number, like 3 or 5? If yes, the phone you purchased is refurbished.
Keep in mind iPhone 14 Pro was discontinued by Apple in September 2023, almost 2 years ago. You could NOT have purchased a new iPhone 14 Pro at this time from virtually anyone.
