The subtitles on Roku are the default and not the custom one I set in the settings. The iPhone honors the custom subtitles and the Roku should also.

Apple TV+ is an Apple product. Other apps on the Roku use the custom subtitles as setup in the accessibility settings. Apple TV+ ignores these settings and defaults to white subtitles.
You might have mentioned you were posting about the Apple TV app on a Roku... in addition, you might have posted in the correct forum. This is the iPhone forum. Your issue wouldn't seem to have anything to do with the iPhone.

Roku is not an Apple product.
Custom subtitles are set in the accessibility section of the device’s settings, not in the individual app. That way you only have to set your preferences once for any app.
