hello! so I currently am trying to connect my wireless headphones to my MacBook Pro, however in settings they don't show up in bluetooth, can anyone help me figure out why? thank you!

Check the instructions for the headphones. Generally, you need to put them in pairing mode for them to show up on the Mac (might be a long press on the power button, a dedicated button, etc., and usually indicated by a blue light blinking on the headphones).
Once they're paired, they will reconnect automatically to your Mac if in range and powered on/
