Polytonic Greek keyboard not showing up after installation on iPad

The keyboard is Polytonic Greek downloaded from the App store. It is all present and correct in Settings and should be visible as an option when the “globe” key on the keyboard is pressed. Various options come up but not the option to shift to another keyboard.

Please tell us what options you do see when you press the globe key.

When an app from the App Store does not work right, you need to ask for help from the people who make it.

If by chance you are talking about using a hardware keyboard, iOS does not support keyboards downloaded from the App Store (but Apple does have its own Polytonic Greek setting which should work).
