Once you block a number, you won't see if they called you. You can see a voicemail, but if they don't leave one, you won't be able to see they called.

If you want to see if they called you but don't want to hear the phone ring when they do, you can buy and download a "silent" ringtone from the iTunes Store and use it as the custom ringtone for that number.

Or, you could set up a Focus that suppresses all notifications for just that person.
