How do I stop voicemail from showing on my iPhone Phone app. It looks like I have to select all every time I open the phone app to see recent calls. If not, the default splits the screen between recent and VM’s. I hope this is fixable because after what Apple did to the photo app, I am worried.

You beat me to it, but yes, that is the right solution.
Nothing has changed with my Phone app from other iOS versions. When I open the app, on the bottom is from left to right - Favorites - Recents - Contacts - Keypad - Voicemail
If I tap Recents, all my recent calls show. If I tap Voicemail, my voicemails appear.
Does your phone app not work this way?
It's not entirely clear what you're seeing that leads to this question.
