I wonder whether the USB C EarPods are compatible with the latest iPhone 17? The compatibility page does not list the iPhone 17 series but I cannot see a reason why?

They almost certainly will be compatible. Apple has not yet updated all their webpages for the accessories compatible with the iPhone 17 lineup. An other example is this USB-C cable that is also not listed as compatible: 60W USB-C Charge Cable (1 m) - Apple.
You may want to wait a few days or a week or two to see the official compatibility in their webpages.
