When I tap on an email the other emails do not slide out of view so I can read the email selected in full screen. Is there a way to enable that?

Double tap on the email to open it in its own window, then tap on the colored bubbles to enlarge them, and tap on the green one to go into full screen.
It's impossible to answer that. It's unknown at this time whether the new full screen option is causing issues to a lot of people at this point.
If enough people complain about it and provide feedback to Apple on their feedback page, it may get changed.

I had the same problem and find this answer, while helpful, not what I wanted to see. The double tap system is awkward. It worked fine before and I’d like to point out here, as I did in the feedback site, that this aspect of this OS is pointlessly complicated.
I figured that part out as a workaround. But is this the way it’s going to be an iPadOS 26 from here forward or is it recognized as something that needs to be fixed? I would imagine that there have been other people talking about this.
