You delete things you don't need or use to free up space. That includes deleting photos, apps, music, files, email, messages, etc. See this for help --> Manage storage on iPhone - Apple Support

Open Settings > General > iPhone Storage > Offload Unused Apps and enable it. But the biggest storage hog on most peoples phones are photos.
Finally, you own an iPhone 8, which is rapidly heading towards being an obsolete device. You clearly don't own an iPhone which meets your storage needs. With all new iPhone 17 model phones, the minimum storage option is 256GB. Perhaps it's time to consider retiring your pretty old at this point iPhone and buy a new, more modern iPhone.
My iPhone is an 8 and the iOS is 16.7. I don’t see a way to remove unused apps from the list showing iPhone storage. I have been clicking and then removing apps but it doesn’t seem to change the space available at all. Any further help will be appreciated.
