It depends on at what stage your order is. If it's preparing to ship, you can't change the order, but you can get the phone you ordered, then return it for refund and buy the phone in the color you want.
If the status is still processing, you "may" be able to change it, but be prepared for the date you'll get the phone to change too, which could be a longer wait. You'll need to contact Apple directly as this is a user to user only forum and we can't change orders at all. In the order confirmation email you received is a link which can give you the option to modify the order, if it's not too late.
