Excessive data usage for unused services on iPhone

I get sick of seeing data use for things I do not use or have like corporate accounts, homekit, accessories, health, focus, remote, and much more. And do not even get me started on the use personal voice across devices that toggles on by itself! I do not use these options nor do I even have the apps listed like remote,health, and homekit. I don't have an accessories (like earbuds) nor do I hook my phone up to any (tv). If I say I dont want data to go these things then I don't want data to go these things. This is rediculous. And then to not even get an answer on what it is thats accessing my data is absolutely unacceptable!!! I mean for apple employees to not have an answer you, is just, it leaves you speechless. Bc if it doesn't exist then it shouldn't exist plain and simple!
