App Store asking for a password to a gmail that isn’t mine when updating

this phone was my moms but I then signed out of her account and put my own sim in and now it asks me for the password to her gmail when updating my apps

You will have to delete the app that your Mom downloaded. Apps are always linked to a specific Apple Account and will not update unless those credentials have been provided. Simply signing out and signing in with a different Apple Account does not transfer ownership of those apps. The proper way to set up a device from a previous owner is found here. It will completely wipe the device.
