How to change apple account

I got a iPhone 16 pro max and I had it set up by the agent in store. I deleted the email that was the apple account id. I set up a new email and I changed my apple account id but something is not right. Can u actually change the apple Account ID that the phone was set up with? Are did I just cause a major problem? I changed the email also with the company i have my plan with but still not sure if i messed up and I also changed my iCloud too the same name as the new email. Never owned a iPhone before so I’m pretty confused

Was this a new device from an Apple Store, or a used device from some other retailer? If it was an account from some unknown previous owner, take the device back to the store and ask for them to remove the account or ask for a refund.
