Missing Complications on Apple Watch 10 during setup

I had an Apple Watch 6 and just upgraded to the 10. During setup I noticed that the watch face wasn’t showing in the app, so I tried to setup the same one again. I found that a whole load of Complications are missing from the list for me to choose, including Heart Rate, Activity Rings, Weather and Temperature. I even checked the link below, and it shows they’re all available for the Modular watch face, which is what I was using before and trying to use again. Anyone have any ideas why they’re not showing anymore?

I used to have:

Bat% | Time/Date

Heart Rate (BPM)

Rings | Weather | Temp
