Hi, I am not from the USA, I ordered iPhone at my hotel address and probably during day I am outside of hotel. Is there any chance that someone from hotel can take package without my signature? Or somehow to sing it online, if it is possible.

This is a user to user only forum, not Apple Support. You'll need to ask the shipper if a signature is required or it if it can signed for by someone else.
You should also be aware, that a phone purchased in the US will not have warranty outside the US. Apple Warranty is NOT international. I hope you visit the US often, as you'll need to bring it back to the US physically if you have any service/warranty issues.

If you are not using a US issued credit card with a US delivery and billing address, don't be surprised if Apple cancels the order entirely.
If you really want to buy in the US, go to an actual Apple Store and make the purchase in person.

I was ordering a lot of times like this and I never had a problem, but it was never from apple, one friend told me today that for apple can be different that courier can ask my personal present and signature.

About warranty I know, it is not a problem for me. From time to time I have business trips to the States if I am going to need some service.
I was not only aware about physical presence for delivery, usually when I order something, hotel stuff sign and take it instead of me

You really should have considered that before placing the order, not after...
Purchasing a device in a country other than your own is never a wise decision.
