Camera Zoom Control With Apple Watch Erratic / Unusable (Ultra 3 & 17 Pro Max)

I am attempting to use the watch to frame and take a photo on my new Ultra 3 and 17 Pro Max and I am stumped; it's a feature thats worked flawlessly for years on several different models.

I have tried flipping the crown to reduce accidental touches, zoom is turned off in accessibility and sensitivity on buttons are set to the slowest setting and no luck.

I frame up the photo perfectly and then carefully try and press the button to capture the photo and the watch starts zooming in erratically on its own fighting against adjustments to un-zoom and try again leaving with me photos only capturing a small portion of what was intended. Very frustrating, appreciate any solutions as all my searches lead to topics related to the zoom on the phone or the watch face but not the issue controlling the camera zoom as a remote. Thanks
