I am on Boost mobile and when working through the process of getting the e sim to activate they told me to bypass transferring my data from my old phone. Now that my new phone is activated they are being very unhelpful about how to transfer all my apps across. They said I can go to an apple store, do it manually or delete my apple account from my new phone and try reinstating it but didn't give specific details. Since it's already setup, you will need to restore it to factory settings and set it up again. during setup you can choose your backup to restore from and it will transfer everything over.

During the restoration to factory settings, you ca choose to keep the eSim so you won't need to activate it again.

Assuming you made either a computer or iCloud backup of the old phone you can just restore that backup and it will reinstall your apps.
