Previously the alarm had a slider to turn it off and tap to snooze. After the ios26 update, but STOP and SNOOZE are tap.
How can this be changed back to slide?

You don't since it is a new feature with ios 26.

It is tap for both stop and snooze in iOS 18 also.
Shoot was it, I thought it was slide to stop it, but I really didn't pay attention to it, since I'm waking up from deep sleep.

Mine had always been a slider for stop and a touch to snooze. My alarm was through the Health app sleep schedule.
That’s odd, because my wife’s iPhone XR with iOS 18 has a both a stop button and a snooze button for the alarm.
