What password?

The Apple Notes app require a password to open or create a Note on Mac.

If you password protect notes, then that applies to already created notes, not the act of creating a new one.

Also you can only Lock notes that are stored on your device or iCloud. Notes stored on other email provider's servers cannot be locked.

Furthermore, you can’t lock notes that have PDF, audio, video, Keynote, Pages, or Numbers attachments; notes that sync with other accounts; or Quick Notes. You can’t lock a note that’s shared in iCloud.
