ApplePay no longer an option to text money

I have been using ApplePay to send money for several years to friends and family. When I tried today, ApplePay is not listed as an option, only Apple cash is. Has something changed after to latest iOS updates?

Yes, back around 2017/18 Apple changed the name from Apple Pay Cash to just Apple Cash. It’s been referred to in documentation, websites, apps etc as Apple Cash the last 8 or so years. You’re not wrong, just never noticed the changes.
