When I press the gif icon here in text bar the whole screen freezes
I have updated WhatsApp
I have updated iOS
Switched my phone off and restarted it
I have uninstalled WhatsApp and reinstalled it
None of the above have cured the problem

Since you keep referring to WhatsApp, that is not an Apple product. WhatsApp is a Meta product and Meta has some of the buggiest apps out there. Apps they have to update multiple times each month and they fix one thing, only to break something else. But since Apple doesn't own WhatsApp, they can't fix their app.
