After the update, WhatsApp no longer allows me to add preset stickers or search for them. Only the keyboard icon appears in gray, and if I try to open it, the app freezes and I have to close and reopen it. The same thing happens with links and documents in WhatsApp. Also, in my banking app, when I open the screen to send a Zelle, the screen appears blank and doesn’t let me do anything. Please help!

It would appear that all the issues you're having are in third-party apps. Try deleting and re-installing the app, Force Restarting, then lastly reporting the issue to the app developers. Highly unlikely this is an Apple issue as all of their native apps work fine.

WhatsApp’s developers have slowly been releasing bug fixes in their software. The latest update was released just 2 days ago. Make sure your app is updated to latest version.
There’s always same with Zelle. Your banks app must be updated to maintain compatibility. Apple made available developer iOS 26 software early last June. Companies have now had 3 months to make their apps compatible.
